I can not believe it is time to write up another birthday party post for Miss Kai; she will be 4 in a few short weeks and I feel like time has flown by! I am so excited that Kai picked a unicorn themed birthday party this year because I was able to find so many goodies!

 


Kai had a BLAST picking out her unicorn decorations! We will be having a combination of 5 Below, Target, and Amazon. Each of these were very affordable and fit her theme!

I am BEYOND excited that I am surprising Kai with a unicorn themed Card My Yard! Our local Card My Yard is owned by Julie Haskins! I have seen Julie a few times at local events and have always loved the energy she has put off and finally pulled the trigger and can not wait to see it set up! Kai got to pick out a few of her favorite unicorn themed recipes from Pinterest, and we always have about 20 people at our family birthday parties so we opted for tacos in a bag!

Our taco bar included: Individual Doritos bags, lettuce, tomatoes, sour cream, cheese, salsa, taco sauce, and peppers!

Unicorn Blondies 

  • 3/4 cup butter; salted and room temperature
  • 1 cup sugar
  • 3 eggs
  • 1 1/2 tsp. vanilla extract
  • 2 cups flour
  • tsp. baking powder
  • cups Circus Animal Cookies
  • 1/4 cup sprinkles, plus more to sprinkle on top
  • Preheat oven to 325 degrees F. In a stand mixer or electric hand mixer, cream the butter and sugar until creamy and fluffy. Add eggs, one at a time until combined. Add the vanilla extract and mix for another 30 seconds until mixture is smooth and combined.
  • Add the flour and baking powder and mix until the dough starts to come together. The consistency will be like a thicker cake batter. Fold in the Circus Animal Cookie pieces and sprinkles until combined.
  • Grease a 9 x 13 inch baking dish and pour batter evenly. I used a spoon to smooth out the thick batter. Top with more cookies and more sprinkles.
  • Bake for 25- 30 minutes or until golden brown. Let cool completely on a cooling rack. Slice into squares with a sharp knife and serve. Enjoy!

Unicorn Punch

  • 1 gallon Berry Blue Typhoon Hawaiian Punch, chilled
  • 2L bottle of Sprite, chilled
  • 2 containers blue birthday cake ice cream (3 quarts total)
  • 1 container pink/orange sherbet (1.5 quarts)
  • Combine the chilled Blue Hawaiian Punch and Sprite.
  • Float the ice cream scoops on top of the punch. Scoop the blue ice cream first, then add the sherbet.
  • Garnish with sprinkles and enjoy immediately.

Unicorn Dip

  • 1 package cream cheese – softened
  • ½ cup heavy whipping cream
  • 1 cup marshmallow cream (fluff)
  • 1-3 cups sugar – You can omit the sugar if you’d rather or even use less to get the consistency you’d like.
  • 1 tsp vanilla extract
  • 3 pastel gel food colors
  • Graham crackers or wafers for dipping
  • Colorful sprinkles (optional) for topping
  • Edible glitter (optional)
  • In a small bowl, whip heavy cream with an electric mixer until you have soft peaks.
  • In a large bowl, combine cream cheese, your heavy cream, marshmallow cream, sugar, and vanilla. Blend with an electric mixer until smooth.
  • Divide mixture into 3 equal parts, and add one *small* drop of gel color to each until you have a desired color.
  • In a clean serving bowl, add 1 spoon full of each of your colored mixtures, alternating until your bowl is full. Take a fork and stir lightly until you have a desired blended look.
  • Add sprinkles and edible glitter.
  • Serve with graham crackers, wafers, or your favorite fruit.

Activities are a must when it comes to birthday parties now since we have 7 + kids at each party! Kai picked out a unicorn pinata and to decorate unicorn horns!

When decorating unicorn horns each kiddo was given an individual painting tray with a ice cream cone in the middle (the horn), they then were able to fill the painting try with goodies to decorate their horn. We had a variety of different treats: marshmallows, bright colored frosting, mini chocolate chips, and so many sprinkles! We also used piping bags to help the kiddos!

We also host an egg hunt every year for her birthday since its always around Easter!
