Topless Turkey Toast & Veggie Soup

Looking for that perfect sandwich for those busy afternoons or evenings? This topless turkey toast may be a perfect fit for you. Pair it with your favorite veggie soup or veggies most recipe to make a great 2B Mindset meal. Recipe inspired by Ilana Muhlstein.


 

Ingredients

  • 1 Slice whole wheat bread, toasted
  • 1 tsp. mustard
  • 1/4 medium ripe avocado, mashed
  • 4 oz deli-sliced turkey breast, nitrite-free, minimally processed
  • 2 leaves lettuce
  • 2 Slices medium red onion
  • 2 Slices medium tomato
  • 1 1/2 Cups all-natural vegetable soup, hot
 

Instructions

  1. Spread toast with mustard and avocado. Top with turkey breast, lettuce, onion, and tomato. Serve sandwich with soup and consume immediately
