These 3 recipes were my lunches this week!
Aug 11, 2022These 3 lunches have very similar ingredients but will still give you a variety of tastes! Meal planning this way is a saving grace on my busy weeks! These recipes all use similar ingredients which makes it easier to assemble in the moment for a healthy lunch or dinner recipe!
Recipe #1
Ingredients:
- 1 cup belle peppers
- 1 cup coleslaw mix
- Chicken bites (I used 5 from my Aldi pack)
- Olive oil
- 1TBSP soy sauce
- 1tsp sesame oil
- 1TBSP rice vinegar
- Olive oil
- Umami seasoning to taste
- 1/2-1 Cup Rice
Directions:
Add olive oil, sesame oil, soy sauce, and rice vinegar to pan and heat. Add chicken bites and heat 5-7 minutes. Add veggies cook for an additional 5-7 minutes. Serve with rice or side of choice.
Recipe #2
Ingredients:
- 2 cups veggies (I used belle peppers and coleslaw mix)
- Chicken bites (I used 5 from my Aldi pack)
- 1/2TBSP butter
- Umami seasoning to taste
- Sriracha mayo
Directions:
Add butter and chicken bites to pan heat 5-7 minutes, add veggies and seasoning to pan and cook for an additional 5-7 minutes. Serve with rice or side of choice and top with sriracha mayo.
Recipe #3
Ingredients:
- 1 package of ramen (do not use the seasoning packet)
- 1/4 package of coleslaw mix
- 1/2 package of chicken bites (I buy Aldi brand)
- Umami seasoning to taste
- 2TBSP olive oil
- Sriracha mayo to taste
- Sesame seeds to taste
Directions:
Cook ramen via boiling water. Sauté chicken in 1TBSP of olive oil for 5-7 minutes. Add coleslaw mix to chicken and an additional 1TBSP of olive oil and Umami seasoning cook for an additional 7-10 minutes . Add ramen noodles after straining them.
Mix together and serve in a bowl and top with sesame seeds and sriracha mayo to taste.
