Recipe Round Up Week 2

Here we are already at week 2! I am BEYOND excited to share these recipes with you guys this week! There are some healthy 2B Mindset breakfast, lunch, and dinner recipes!


Everything Bagel, Buffalo Chicken Slices, & Cheese, & (spinach not pictured)

First up is a post workout breakfast sandwich that I made! I used a Dave's Killer Bread Organic Epic Everything Bagels that I got in my weekly Imperfect Foods Delivery, 3 slices of buffalo style sliced chicken breasts,and some smoked gouda cheese. Pricing: Dave's Killer Bread Organic Epic Everything Bagels (16.75 oz) - $4.99 ,  sliced chicken breast was jennie-o brand from my mother in law, Smoked Gouda Cheese $4.68/lb from Sams Club.


Instapot BBQ Chicken & Coleslaw With Homemade Dressing

Frozen Chicken Breast or Tenderloins - Kirkwood Frozen Chicken Tenderloins $6.05
1/4-1/2 bottle of BBQ sauce - Burman's original BBQ Sauce $.99 (16oz)
1/2 Cup of Chicken Broth -$1.99
1 14oz package of coleslaw mix- $1.65
1 cucumber - $.75
1/4 Cup Olive Oil - $2.75 (16.9oz)
2 Tbsp Balsamic Vinegar - $2.29 (16.9oz)
2 Tbsp White Wine Vinegar - $2.29 (16.9oz)
1/2 Tsp Salt - $.55-$2.09

Place chicken breast and chicken broth in Instapot and cook for 20 minutes
Release and shred chicken then add BBQ Sauce and mix together for an additional 5ish minutes on simmer.
Shave and slice cucmber.
While the chicken is cooking make your coleslaw mix! In a medium bowl add the olive oil, balsamic vinegar, white wine vinegar, and salt mix together and then add the coleslaw and the shaved and cut up cucumber.
Serve coleslaw and chicken together

Great recipe to not waste any veggies and have a light side for a lunch or a snack!


Breaded Cod + Cabbage + Mexican Cheese + Fresh Salsa

Fresh Cod Pieces were from my Imperfect Foods Delivery $7.49 for 4 pieces
Cabbage - $.75/lb
Fresh Salsa - $2.75 (16 oz)
Shredded Mexican Cheese - $3.19 (12oz)
Panko Bread Crumbs - $.95 (8oz)
Salt & Pepper
Flour
Egg

Chop Cabbage to the size that you want.
Place breadcrumbs onto a plate, on an additional plate place flour, and mix an egg in a small bowl.
Season cod pieces with salt and pepper and any other mexican seasoning you want, then dip the cod in the egg mixture, then the flour mixture, then the egg mixture again, and then the panko mixture, then place cod in the air fryer. Complete this step for each piece of fish.
Cook in air fryer for 6-8 minutes on each side at 400 degree.
Serve fish with salad and salsa
