Meal Prepping- Weekly Recipes

Hey Hey Hey! It's been 2 weeks since I have had time to round up my recipes for you guys and I am SOOOOOOO excited to share these ones with you! These recipes scream busy mom who still wants yummy healthy meals on the table every night! My hope is these recipes are simple and delicious and that you and or your family love them as much as we do! Happy Meal Planning!


Spicy Broccoli Soup With Garlic Pork Chops

Instapot Recipe- Modify this recipe depending on how big of a batch you want to make.


Ingredients:
-4 Cups chopped broccoli
-3 Cups Shredded Cheese - We did a spicy shredded cheese to make the soup spicy
-1.5 cups of heavy whipping cream
-1/4 Cup Diced Onion
-1 Cup Carrots (cut)
-1 Cup Celery (cut)
-1 Cup Mushrooms (cut)
-1/2 tbsp of garlic powder
-2 tbsp unsalted butter
-2 Cups Veggie or Chicken Stock
-Salt & Pepper to taste I don't add this until I make my bowl

Directions:
Add butter, onions, celery, carrots to instapot on saute for 7 minutes mixing frequently.
Add broccoli & mushrooms & stock to instapot and put on manual pressure for 7 minutes then release
Add whipping cream & switch to saute mode, then add shredded cheese and continue stirring.
Once combined enjoy!

Garlic Pork Chops Recipe

Oven Recipe

Ingredients:
-Pork Chops Thawed
- 1 tbsp Olive oil
-1/2 tsp of Italian seasoning, garlic, salt & pepper

Directions:
Mix together all the seasonings and olive oil and top pork chops
Bake at 350 degrees for 25-35 minutes depending on your oven, make sure the dish you cook them in has sides so the fat and oil don't drip in your oven.
Place with a small bowl of soup and enjoy!


Lemon Pepper Tilapia With Air Fryer Buffalo Cauliflower

Ingredients:
-Tilapia Fillets - I got ours from Imperfect Foods 
-Lemon Pepper Seasoning + Olive Oil to coat the fish and cook the fish in

Directions:
Add olive oil and coated fish into a pan and cook for 5-7 minutes on both sides if frozen and 3-4 minutes on both sides if thawed
Coat buffalo cauliflower with olive oil and buffalo sauce and place in air fryer for 7-10 minutes at 400 degrees
Enjoy when both are fully cooked


Yogurt Bowl

I tried the new Chobani lactose free yogurt and it was super good!

Ingredients:
-Dairy Free Yogurt-chobani lactose free yogurt
-Raspberries
-Unsalted broken Walnuts From Imperfect Foods
-Honey & Nut Granola from Imperfect Foods 


Hamburger + Brioche Bun + Salad Kit


Directions:
-Hand Patty Ground Beef + Add Seasoning We use Lawry's Seasoning Salt
-Cook Hamburgers on the grill or in a skillet
-Brioche Buns from Imperfect Foods I toasted ours in the oven
-One Salad Kit I get our salad kids from Aldi, Sam's, or Hyvee


Instapot Chicken Burrito Bowl


Ingredients:
-3 Boneless Chicken Thighs (you could use breasts)
-1 Packet of Taco Seasoning
-1/2 tsp garlic powder, chili powder, and cumin
-2 Cups Chicken Broth
-1 Can Pinto Beans
-1 Can Kidney Beans
-1 Cup Rice
-Toppings: Shredded Cheese, Avocado, Tomatoes, Sour Cream, Salsa, Lettuce

Directions:
Add chicken, 1 Cup chicken broth,  Beans & Seasonings to Instapot stir
Add Rice & remaining chicken broth (DO NOT STIR)
Cook on manual or poultry for 10-15 minutes (I do 15 when the chicken is frozen and 10 if the chicken is thawed.)
Stir & Serve and top with your favorite toppings


Chicken Gnocchi Soup


Ingredients:
-3-4 boneless chicken thighs or breasts
-1 Cup Celery
-1/2 Cup Onion
-1tsp of garlic powder
-1 Cup Carrots (diced)
-1 Tbsp Olive Oil
-4 Cups Chicken Broth
-2 tsp Italian seasoning
-1 package gnocchi
-1 Cup 1/2 or whipping cream
-2 Cups Spinach
-1/2 Cup Mushrooms

Directions:
All everything but the whipping cream, gnocchi and spinach into the instapot and cook on manual for 10-15 minutes (I do 15 when the chicken is frozen and 10 if the chicken is thawed. )
Add whipping cream, gnocchi, and spinach and simmer for an additional 7-10 minutes.
Serve & Enjoy
