Healthy Holiday Recipes
Nov 12, 2020Can you believe that it is almost the holiday season already? Halloween has come and gone and we are officially kicking off prepping for Thanksgiving, Christmas, and New Years. Being a 2B Mindset Mentor I am falling in love with finding simple swaps in recipes for the Holiday season! Below you are going to find the recipes I think will be a hit for the Holidays!

Caramelized Carrots: Makes apx. 26 pieces
Ingredients:
2 pounds carrots, peeled and sliced into 4-6 inch pieces
2 tablespoons olive, grape seed or avocado oil
2 tablespoons brown sugar
1 teaspoon salt
1 teaspoon cinnamon
Directions:
Place carrots into a steamer for about 10-12 minutes or until fork tender.
Meanwhile, preheat the oven to 400 degrees.
In a small bowl, mix together salt, brown sugar and cinnamon. Add the oil and turn into a paste.
Let the steamed carrots sit to cool, then place on a parchment- or tinfoil- lined baking sheet.
Using well washed or gloved hands, rub the brown paste all over the carrots.
Bake for 7 minutes. Garnish right before serving, and enjoy!

Pomegranates have a lot of fiber; 3.5g of fiber per 1/2 cup- all within those juicy edible seeds. They’ve been studied for their heart health, anti-inflammatory and exercise endurance benefits as well. Pomegranates add a burst of sweetness, and there is no wrong way to eat them. These are just a few ideas to utilize this great fruit this holiday season.

These cucumber recipes are so simple and make a great addition to any appetizer table during the holidays!

Ingredients:
1 pound Brussels sprouts, halved or quartered
2 tbsp melted coconut oil
2 tbsp honey
2 tbsp balsamic vinegar
¼ cup chopped craisins and/or pecans
Optional: add cubes of roasted butternut squash
Other things you’ll need:
-sheet pan
-parchment paper
-large glass bowl
-spatula
Directions:
Preheat the oven to 375.
Line a baking sheet with parchment paper and spray with cooking spray
Put up boiling water with a steamer basket
Quarter brussels sprouts
Put them in steamer basket
Add 2 tablespoons of coconut oil to large glass bowl
Melt the coconut oil over the steamer basket (or in a microwave)
Add honey
Add balsamic vinegar to bowl and whisk
Take brussels out of steamer basket (2-5 minutes), drain and add to the glass bowl
Mix together with the spatula then arrange brussels sprouts in an even layer on the baking sheet. Place in oven for 35-40 minutes.
Chop up craisins (and pecans if using)
After 30 minutes, check their tenderness by inserting a fork. If you prefer your brussels sprouts more well done, continue to bake for 5-10 minutes.
Sprinkle craisins over the brussels sprouts (and pecans if using)
