Nov 08, 2022Happy Fall! I can not believe that I am writing that! I feel like that last 6 months have flown by while going super slow at the same time; 2020 is a CRAZY year for sure! In this post you are going to find a variety of different fall recipes! If you have a fall recipes you want me to try; drop it in the comments!
Chicken Pot Pie
1/2-1 rotisserie chicken
2 can cream of chicken soup
1 box premade raw pie crusts
2 can large cut mixed vegetables
Preheat Oven to 350
roll out one of pie crusts and form it into the bottom of a 8×8 pan
Mix chicken and all other ingredients in a large bowl then pour into pan
Roll out other pie crust and place on top then cut a few one inch cuts on top to vent pie
place in oven and cook until pie crust is golden brown.
Dutch Oven Chili (Could also be made in the crockpot)
-Chili powder packet
-1/4 cup chicken broth
-Garlic
-Onion
-1 can kidney beans
-1 can pinto beans
-1 can rotel
-1 can diced tomatoes
-Celery
-Mushroom
-Hamburger
-Bacon
-I put everything in my dutch oven on the stovetop on medium low heat for 2 hours
-Add with your favorite topping
Apple Cinnamon Oatmeal
We tired this recipe but I forgot to take a photo! I'm obsessed with making apples this way now!
-2 apples, finely chopped
-3 tablespoons pure maple syrup
-1 tablespoon butter
-1/2 teaspoon ground cinnamon
-1 tablespoon water
-Place all ingredients in a medium saucepan. Cook over medium heat, stirring occasionally, until the apples are tender (about 10-15 minutes) but still holding their shape. Add an additional tablespoon of water if the mixture seems dry.
-Make oats as you normally would and add apples and maple syrup when you serve it.
Pumpkin Overnight Oats- Kai wasn't a huge ran of this recipe but I thought it was good mixed into my yogurt!
-½ cup almond milk
-½ cup oats
-¼ cup pumpkin puree
-¼ tsp vanilla extract
-2–3 tsp maple syrup
-1 Tbsp chopped walnuts or pecans, optional
Creamy Spaghetti Squash
-Spaghetti Squash (I used a small sized one) - Bake at 350 for 25-40 minutes depending on the size & then shred it.
-1/4 tsp garlic powder
-Salt & Pepper to taste
-Chicken Breasts (I cooked 4 chicken breasts in my instapot for the first part of the week)
-Cream Cheese (amount will depend on how many servings you are making
-Spinach
-Cauliflower
-Sweet Peppers
-Heat everything and combine
Spaghetti Squash & Veggie Naan Bread
-Spaghetti Squash (I used a small sized one) - Bake at 350 for 25-40 minutes depending on the size & then shred it.
-1/4 tsp garlic powder
-Salt & Pepper to taste
-Chicken Breasts (I cooked 4 chicken breasts in my instapot for the first part of the week)
-Shredded Cheese Blend
-Balsamic Vinegar
-Place naan pizza with toppings in oven at 325 for 10-14 minutes depending on desired crispiness
Pumpkin Spice Latte
-4oz Starbucks espresso coffee
-4oz Almond Milk
-2Tbsp Pumpkin Spice Syrup
-Cinnamon
-Whipped Cream
-Brew coffee & heat almond milk
-Add pumpkin spice syrup, cinnamon, and whipped cream
Vanilla Latte
-4oz Starbucks espresso coffee
-4oz Almond Milk
-2Tbsp Vanilla Syrup
-Whipped Cream
-Brew coffee & heat almond milk
-Add vanilla syrup and whipped cream
