Chili Mac & Cheese Recipe
Jul 09, 2020As someone who hasn’t always been a fan of chili I am always looking for new chili recipes to try out. After a few Pinterest searched for chili inspired recipes I morphed a few recipes together as well as modifying to be veggies most and use up what we had on hand at the house and this version of chili mac and cheese was born.
I used my wonderful dutch oven to cook this but this recipe would be a great crockpot recipe or freezer meal as well. Not only was this recipe approved by me my husband and year and a half year old LOVED it. This recipe has officially been added to our winter rotation!
Serving: 8-10
Ingredients
- 1 lb Ground Beef
- 1 tbsp Minced Onion OR 1/2 Cup
- 1/4 tsp Pepper
- 1/2 tsp Salt
- 1 Tsp Oregano
- 1 Tbsp Chili Powder
- 1 Tsp Cumin
- 1 Tbsp Garlic Powder
- Olive Oil
- 2 Cans Diced Tomatoes
- 1 Can Kidney Beans
- 1 Can Pinto Beans
- 1 Carton (32oz) Beef Stock
- 1 Belle Pepper
- 2-3 cups Spinach
- 2-3 Cups Shredded Cheese
- 1/2 Box Elbow Macaroni
Instructions

Wash & Cut all produce. Thaw Hamburger. Open and drain all beans.

Brown Hamburger with onion and garlic, drain hamburger.

Add spices, browned hamburger, vegetables, beans, and broth to pot. Bring to a simmer.

Then add noodles, cook for an additional 15-20 minutes until noodles are cooked.

Add cheese and sir together. Serve!
