Chicken and Gnocchi Soup Recipe

My husband LOVES the Chicken Gnocchi Soup from Olive Garden but I don’t love going to that restaurant so when I found Gnocchi at Aldi last winter I knew I had to try and replicate this recipe. After a few attempts to make it just as delicious as the restaurants while making it a little healthier and 2B Mindset approved we have finally perfected the recipe!

I have cooked this recipe within my dutch oven as well as my crockpot and we loved it both times!


 

Serves 8-10

Ingredients

  •   Chicken Breasts or Rotisserie Chicken
  • 2-3 Cups Spinach
  • 2-3 Cups Broccoli
  • 1 Cup Carrots
  • 1/2 Cup Onion
  • 1 Package Gnocchi
  • 2 Tbsp Butter
  • 8 Tbsp Flour
  • 6 Cups Chicken Broth
  • 1/2 tsp Thyme
  • 1.5 Tbsp Salt
  • 1/2 tsp Pepper
  • 1Tbsp Garlic Powder
  • 2 Cups Half & Half

 Instructions

  1. Chop all vegetables and dice chicken if you are using chicken breasts, or shred rotisserie chicken

  2. In a large pot,butter over medium high heat. Add in all other spices. (Add chicken breasts if you are using chicken breasts now- so they have time to cook.)

  3. Add carrots, onion, and broccoli. Now add flour and stir it in for 2-3 Minutes.

  4. Add chicken broth, let simmer for 5-10 minutes, then add gnocchi. Simmer for another 10-15 minutes to cook gnocchi. Stirring occasionally.

  5. Now add half and half and spinach, simmer for another 5ish minutes and serve!
