Baked Egg Roll Recipe

Egg rolls have become one of my favorite recipes; they are a great way to load up on veggies without feeling deprived. This is how I am making them healthy for our house.


 

Ingredients

  • 1 Package Egg roll wrappers
  • 6-9 Cups Coleslaw Mix
  • 1-2lbs Meat of choice (we have used pork, chicken, and beef)
  •   Olive Oil
  • 3Tbsp Divided Soy Sauce
  • 3 Tbsp Divided Teriyaki Sauce
  • 1/2 tsp Sesame Oil

Instructions

  1. Cook meat with 1.5 Tbsp of soy sauce, 1.5 Tbsp teriyaki sauce and 1/2 tsp sesame oil.
    *If using chicken or pork add 1Tbsp of olive oil

  2. Add 1.5 Tbsp of soy sauce, 1.5 Tbsp teriyaki sauce to pan add coleslaw and whatever other veggies you will be filling your wrappers with me. Saute for 8-10 minutes.

  3. Let meat and veggies cool prior to assembly

  4. Put 1-2 Tbsp of meat and veggies in each egg roll wrapper, wrap, and cover with olive oil and place on pan.

  5. Bake for 12 minutes at 425 degrees on one side, and then flip for an additional 8 minutes, and broil for 3 minutes. Enjoy!
